Ingredients

  • 4 large yellow or sweet onions, peeled and sliced into thick rings

  • 2 cups shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 2 tablespoons unsalted butter

  • ½ cup milk (or heavy cream for extra richness)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder (optional)

  • ¼ teaspoon paprika (optional)

  • Fresh parsley or chives, for garnish (optional)


Instructions

  1. Boil the Onions
    Bring a large pot of lightly salted water to a boil. Add onion slices and cook for 8–10 minutes until just fork-tender. Drain well and set aside.

  2. Preheat the Oven
    Preheat oven to 375°F (190°C). Lightly butter a baking dish.

  3. Make the Cheese Sauce
    In a saucepan over low heat, melt butter. Add milk and warm gently. Stir in cheddar and mozzarella a little at a time until smooth. Season with salt, pepper, garlic powder, and paprika.

  4. Assemble
    Place onions evenly in the baking dish. Pour cheese sauce over the onions, ensuring all pieces are well coated.

  5. Bake
    Bake uncovered for 20–25 minutes, until bubbly and lightly golden on top.

  6. Serve
    Let rest for 5 minutes. Garnish with fresh herbs if desired and serve warm.

Notes

  • Do not overboil the onions or they may become mushy

  • Freshly shredded cheese melts better than pre-shredded

  • For extra creaminess, add 2 tablespoons cream cheese to the sauce
