Vegan Air Fryer Mac and Cheese that’s ultra creamy inside and golden crispy on top—100% dairy-free, easy, and family-approved.
Ingredients
8 oz elbow macaroni (or pasta of choice)
1 cup raw cashews (soaked) or 1 cup boiled potatoes & carrots
1½ cups unsweetened almond or oat milk
¼ cup nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp Dijon mustard
½ tsp smoked paprika
1 tbsp lemon juice
Salt & pepper to taste
Optional: Vegan shredded cheese, breadcrumbs for topping
Instructions
Boil pasta until al dente, then drain.
In a blender, combine cashews (or cooked veggies), plant milk, nutritional yeast, mustard, spices, and lemon juice. Blend until smooth.
Mix pasta with sauce until fully coated.
Transfer to an air fryer-safe dish. Add optional toppings.
Air fry at 375°F (190°C) for 10–15 minutes, or until top is golden and bubbly.
Let cool slightly, then serve and enjoy.
Notes
Soak cashews in hot water for 20–30 minutes for creamier results.
Gluten-free pasta works well but cook slightly under al dente.
Reheat leftovers in the air fryer with a splash of non-dairy milk for best results.
