Description

Vegan Air Fryer Mac and Cheese that’s ultra creamy inside and golden crispy on top—100% dairy-free, easy, and family-approved.


Ingredients

Scale
  • 8 oz elbow macaroni (or pasta of choice)

  • 1 cup raw cashews (soaked) or 1 cup boiled potatoes & carrots

  • 1½ cups unsweetened almond or oat milk

  • ¼ cup nutritional yeast

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Dijon mustard

  • ½ tsp smoked paprika

  • 1 tbsp lemon juice

  • Salt & pepper to taste

  • Optional: Vegan shredded cheese, breadcrumbs for topping


Instructions

  1. Boil pasta until al dente, then drain.

  2. In a blender, combine cashews (or cooked veggies), plant milk, nutritional yeast, mustard, spices, and lemon juice. Blend until smooth.

  3. Mix pasta with sauce until fully coated.

  4. Transfer to an air fryer-safe dish. Add optional toppings.

  5. Air fry at 375°F (190°C) for 10–15 minutes, or until top is golden and bubbly.

  6. Let cool slightly, then serve and enjoy.

Notes

  • Soak cashews in hot water for 20–30 minutes for creamier results.

  • Gluten-free pasta works well but cook slightly under al dente.

  • Reheat leftovers in the air fryer with a splash of non-dairy milk for best results.
