Creamy, spicy, and endlessly customizable, this Spicy Air Fryer Mac and Cheese takes comfort food to the next level with bold global fusion twists—from Indian garam masala to Mexican jalapeños and Italian Calabrian chili.
Ingredients
Base Mac and Cheese (for 4 servings):
1 ½ cups elbow macaroni (or pasta of choice)
2 tbsp butter
2 tbsp all-purpose flour
1 ½ cups whole milk
½ cup heavy cream (optional for extra richness)
1 cup sharp cheddar cheese, shredded
½ cup mozzarella cheese
¼ cup Pecorino Romano or Parmesan cheese
1 tsp garlic powder
Salt and pepper to taste
¼ tsp paprika (optional)
Choose Your Global Flavor Twist:
Mexican: 1 tsp chipotle powder or 1 diced jalapeño, ¼ cup cooked chorizo
Indian: ½ tsp turmeric, ¾ tsp garam masala, pinch of chili powder
Italian: 1 tbsp Calabrian chili paste, ½ cup spicy Italian sausage
Optional Toppings:
½ cup shredded cheese for topping
¼ cup panko breadcrumbs

Instructions
Pre-boil the pasta until just under al dente. Drain and set aside.
Make a roux by melting butter in a pan, adding flour, and whisking for 1 minute.
Slowly whisk in the milk and cream until smooth and slightly thickened.
Stir in cheese, garlic powder, salt, and pepper. Mix in your chosen global spice combo.
Fold the pasta into the cheese sauce and transfer into an air fryer-safe dish.
Top with more cheese and breadcrumbs (if using).
Air fry at 375°F (190°C) for 10–12 minutes, removing foil halfway for crispiness.
Let it cool slightly, garnish with herbs or chili flakes, and serve warm.
