Description
These ultra crispy mac & cheese bites are the perfect make-ahead snack or party appetizer. Creamy on the inside and golden on the outside, they’re easy to air fry, bake, or fry—and completely family-friendly. Great for entertaining, freezer prep, or quick weeknight snacking.
Ingredients
For the Mac and Cheese Base:
¾ lb elbow macaroni
3 cups shredded sharp cheddar cheese (or Cooper® Sharp White Cheese)
¼ cup unsalted butter
¼ cup all-purpose flour
2 cups whole milk
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
For Breading:
2 cups all-purpose flour
2 eggs, beaten
2 cups panko breadcrumbs
1 cup Italian-style breadcrumbs
For Air Frying or Frying:
Cooking spray (for air fryer) or vegetable oil (for deep frying)
Instructions
Make the Cheese Sauce:
In a saucepan, melt butter over medium heat. Whisk in flour to form a roux and cook for 2–3 minutes. Gradually whisk in milk until smooth and thickened. Add cheese and stir until melted. Season with garlic powder, onion powder, salt, and pepper. Mix in cooked macaroni. Cool and refrigerate for 4 hours.Shape the Bites:
Scoop chilled mac and cheese into 1.5-inch balls. Place on a baking sheet and refrigerate again for 30 minutes.Bread the Bites:
Set up a breading station: flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Roll each ball in flour, dip in egg, then coat with breadcrumbs.Cook the Bites:
Air Fryer: Preheat to 390°F. Lightly spray bites with oil and cook for 8–10 minutes, flipping halfway.
Oven: Bake at 400°F for 18–22 minutes, turning once.
Fry: Heat oil to 375°F. Fry bites for 2½–3 minutes until golden brown.
Serve:
Let cool slightly and serve with your favorite dipping sauces.
Notes
To freeze, flash-freeze the breaded bites on a tray, then transfer to a freezer bag for up to 2 months.
Use part-skim mozzarella or light cheddar for a lighter version.
Avoid overcrowding in the air fryer or frying pan for best results.
