Description

Kid-friendly mac and cheese muffins (air fryer): a crispy, creamy snack kids love. Easy to make, freezer-friendly, and perfect for lunchboxes.


Ingredients

  • 2 cups cooked elbow macaroni

  • 1 ½ cups shredded cheddar cheese

  • ½ cup shredded mozzarella

  • ¼ cup milk

  • 1 egg, beaten

  • ¼ cup breadcrumbs (optional topping)

  • Salt & pepper to taste

  • Butter or cooking spray (for greasing)

  • Optional add-ins: broccoli, ham, bell pepper, or peas


Instructions

  1. Preheat air fryer to 375°F and lightly grease silicone muffin cups.

  2. In a bowl, mix cooked pasta, cheeses, milk, beaten egg, salt, and pepper.

  3. Spoon mixture into muffin cups, pressing gently to pack.

  4. Top with optional breadcrumbs or extra cheese.

  5. Place muffin cups in air fryer basket (leave space between them).

  6. Air fry for 8–10 minutes or until tops are golden and edges are crispy.

  7. Let cool for 5–10 minutes before removing to help them hold shape.

  8. Serve with dips or pack for school lunches!

Notes

  • For extra creaminess, stir in a tablespoon of cream cheese before air frying.

  • Use gluten-free pasta and dairy-free cheese for allergy-friendly muffins.

  • Make ahead and freeze—reheat directly in air fryer at 350°F for 4–5 minutes.
