Ingredients
1 cup high-protein pasta (chickpea or lentil pasta)
½ cup reduced-fat cheddar cheese, shredded
¼ cup part-skim mozzarella cheese, shredded
¼ cup plain non-fat Greek yogurt
⅓ cup unsweetened almond milk (or low-fat dairy milk)
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon mustard powder (optional)
½ cup cooked lean protein (chicken breast, tofu, or turkey) – optional
½ cup steamed vegetables (optional)
Salt and pepper to taste
1 tablespoon light breadcrumbs for topping (optional)
Instructions
Preheat air fryer to 360°F (182°C).
Boil pasta until just al dente (1-2 minutes less than package instructions), then drain.
In a mixing bowl, combine pasta, cheeses, Greek yogurt, milk, and all spices.
Add cooked protein and/or vegetables if desired, then mix well.
Transfer to an air fryer-safe dish or foil pan. Sprinkle breadcrumbs and extra cheese on top.
Air fry for 8-10 minutes or until the top is golden and bubbly.
