Ingredients
250g cavatappi pasta
1 cup sharp cheddar cheese, shredded
¾ cup Gruyère cheese, shredded
½ cup Fontina cheese, shredded
¼ cup Parmesan cheese, grated
1 lobster tail (fresh or frozen), steamed and chopped
2 tablespoons truffle oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
½ cup heavy cream
½ cup panko breadcrumbs
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon mustard powder (optional)
Instructions
Cook pasta in salted water until al dente, then drain.
Prepare cheese sauce by making a roux with butter and flour, then adding milk and cream. Stir in cheeses until fully melted and creamy.
Steam lobster tail, chop into large chunks.
Combine pasta, lobster, and cheese sauce, then drizzle truffle oil and mix gently.
Transfer to an air fryer-safe baking dish, top with breadcrumbs and extra cheese.
Air fry at 350°F (175°C) for 8-10 minutes until golden brown and crispy on top. Serve hot.
Notes
Don’t overcook lobster; it will continue cooking in the air fryer.
Truffle oil is powerful—start with less and taste before adding more.
You can substitute crab meat for a budget-friendly twist.
