Description

Ingredients
- 1 cup tapioca flour
- 1 cup grated queijo coalho (or mozzarella)
- 2 large eggs
Instructions
1. Beat the eggs in a mixing bowl.
2. Gradually add tapioca flour while stirring.
3. Fold in cheese until fully combined.
4. Let the batter rest for 5 minutes.
5. Heat a non-stick skillet on medium. Pour batter and cook 3 mins per side.
6. Serve hot with optional dipping sauces.
Notes
– For extra flavor, add herbs or chili flakes to the batter.
– Works well with smoked cheese or coconut for variations.
